- Hey all!
Hope you had a great start into the new week. I've got several things on the blog plan today!First, I had a wish from a reader to share my Hummus Recipe. It's SO easy and SO good! So, here we go:
Take 2 cans of chickpeas, cooked and rinsed. You could also buy raw chickpeas and cook them. I did that once and it takes hours, but if you got the time, go for it!
Give the peas into a large blender.
Add the juice of 1 lemon.
Add 2 tbsp of your favorite oil (I used rapseed).
Add 100-150g of plain fatfree yogurt. (see how thick it gets. Depending on how smooth/thick/fluid you like it, add more or not.)
Add spices: 1 handful fresh chives, 1 tbsp pepper, 1 tsp seasalt, 1tsp coriander.
Mix and mash till it's smooth.
You can pimp your hummus with whatever taste you like! Pumpkin, dry tomatoes, olives etc. Just stir it under the mass at the end.
If you store it in the fridge, it stays fresh for more than a week.
I use hummus in my salads, as a side dish with steamed veggies, on wholegrain bread or as a dip with veggies - perfect snack!!
Enjoy, I hope you like it!
The other recipe is a casserole or bake or gratin - I am not sure how to call it in english. Anyway, I think it's the perfect meal especially to prepare when you have other things to do at the same time, cause it just stays in the oven till it's ready!
I call it Veggie-Eggie-Bake:
Ingredients:
1tbsp rapseed oil
100g spinach
10 cherry tomatoes
1 pepper
1 egg
2 eggwhites
1 tbsp oatmeal
100g chicken cut
1tsp pepper, 1tbsp curry, 1tsp garlicpowder
Preparation:
Preheat oven to 220°C
Wipe the bake bowl with a paper and the oil
Wash and cut veggies, put them in the bowl (spinach on the bottom, rest on the top)
Top with half of the chicken cut
Put it in the oven for 10-15 minutes
Prepare the eggs:
Mix the egg and eggwhites in a blender together with oatmeal, rest of chicken cut and spices, stir well, let it set for a few minutes.
Take out the baking veggies after 10-15 minutes and pour over the eggmix.
Let cook for another 10 minutes.
If you like, you could add some Mozzarellaslices or grated parmesan on the top 5 minutes before it's done.
That gives about 2-3 meals, perfect if you are short in time!
Some new finds for today:
I love these Christmasmugs from Starbucks! I already have 4 (4!!) of these tranparent mugs with the straw which I love so much for my daily teas.
But these seasonal ones are really cute!

New recipe find: Vanilla Cupcakes by Danielle! Mine looks a bit darker though but it tasted delicious! No, it's not cheese, it's white almond butter on top. Maybe I should try it with cheese though one day...? Hm, no.
Bookfind: This trilogie from Sara Lark. It's a story that takes place in 1875 in New Zealand and it's SO fascinating and compelling! I've never been to NZ, but if you've been there and you love it, you should definitely read this. I think this one on the picture is the second or the third part.
New bikini-bootcamp find: I totally love these full-body-workouts as you know. Here's a new one from Jeanette Jenkins and it's kick-ass! When I decide to do this, I go through 3-4 different 10minute-workouts and after I am knocked down and have to lay on the floor because I can not walk, take the stairs or go to the toilet anymore.
